Not sure what OP did, but I've had success using counter-attacks in this case, and reducing the attacks I do (choosing only one attack skill, the rest recovery skills) - at least if it looked like I'd "kill myself" via attacks.
But yes these types of enemies can easily catch you out by getting you to punch yourself in the face, effectively...
Against strength users that don't block or dodge you have a modifier that increases damage by 40%, plus an attack that drains their initiative at the end of the tree means they never get to take a turn
And against stamina aka blockers you have two modifiers that reduce block chance by 15% and 20% and an attack that reduces their blocking effectiveness meaning it deals higher damage when blocked, there's also a modifier that reduces their blocking effectiveness by 15%, if you use those you will win
I think I had 39 strength, 28 agility, and 31 stamina by the time I was done.
Stamina fighters I just wailed on the oppoent while making sure that every other attack was either "wait" or stamina recovery while fighting in Smasher.
Agility I used Flycatcher and they killed themselves from reflected damage and the dodge reduction + attacks that have high hit rates makes those fights trivial with how much damage I was doing per hit even on basic attacks.
Against other strength fighters I just used Beserker and fights were over in a round.
I think I only lost twice the entire game. Once in the beginning because I didn't know what I was doing with the fighting styles or how to counter different styles and to Jai because I wasn't expecting that fight at all.
