Blue stat improves how many times you can attack during your turn
Green stat improves stamina
The main focus is your moveset, you have to have a balanced moveset for it to feel right. The workout stats do not make you a better fighter, the moves you select do.. The Red/Blue/Green stats also unlock new moves so working out gets you better moves, better moves makes you a better fighter. Its different than the first a bit but it's for sure more balanced. Meaning focus on your movesets more than your stats. Hope this helps.
Try to build your moveset around what your opponent is using. Try to spend around the same amount of stamina per round while doing more damage. Pay attention when they pull back moves to conserve energy. You may need to do the same. Though when they get low, I just go all out and don't worry about energy. Chances are, I'll knock them out before running out anyway.

Meanwhile on my first playthrough (on normal) i only lost like three times the whole game, once vs skinny jenkins, once vs boris and once on the last phase of the final boss, but surely the game is unbalanced! Can't possibly be the fact that you're just too bad or impatient at the game!
I just wonder what their stat distributions and skill tree unlocks are, because I went stamina (torture to be specific) and focused in on that tree - beelining directly to the vampire modifier and only after that starting to collect side skills. Maybe some people are getting to many items off of side branches rather than focusing - that could lead to a number of low damage moves that drain out initiative even if there are stats for higher damage moves. Not to mention are they switching moves out on occasion/leaving an attack empty to allow for more energy regen during the fight? It also seems like a number of people who do post their stats are going to hard on strength and not enough in stamina (have people on an agility build been having trouble? ).
If you got all attack skills empty, you will always restore X energy instead of attacking
However this happens on each initiative
If you got 3 initiative, you will restore 3x energy during your turn
If you got 5 initiative, you will restore 5x energy
If you got 10 initiative, you will restore 10x energy
This means while the energy regen scales with stamina, the total energy regenerated scales heavily with agility too, so agility and stamina are both important for energy management
Strength is definitely the worst of all three stats and too many people go super high strength while ignoring the other two and then running out of energy super fast then having little energy regen and meanwhile the few attacks they did were blocked or dodged not doing all that much damage
