Prior to that, use moves that sap as much of his energy as possible, so that hopefully he loses "focus" for the next round.
You can tell he's no longer focused because he'll use "energy saving" moves for all his attacking moves. Not only will he not attack much (or at all), but his blocks won't be as effective any more.
If you're using a specific build, it might either be easy or extremely tough, I had to unlock more skills from the skill tree to eventually breeze through the fight.
However, one thing that will help you a lot is the fact Jenkin's stamina gets really low in Round 2. You can get a knockdown if you apply enough pressure on him. After that I preserved my stamina and eventually won.
Just a few hours ago I KO'd him as well, but I did pretty much the opposite of this. While I used lots of cheap moves to get his stamina down (so much that he had "lost focus" in rounds two and four), but instead of using those rounds to replenish my own stamina, I stacked all my hardest hitting attacks (still only the first agility kick that uses up the special agility tone thing).
Since he wasn't going to attack me, I removed all my defensive moves and bonus things for that round too, just in case (though the defenses wouldn't have triggered anyway in those rounds so that's probably not useful).
Ps: Im using the Bear route (strength focus)
EDIT: Finally beat him, but my suggestion still stands.
surprisingly, not only did i full KO him, i forced him to go out of focus due to low stamina on round 5 aswell!
Unfortunately there is no way to decrease your stats as far as I know.
strength builds should keep their agility low(er) and skip defensive moves that cost energy to save on energy and just focus on a few powerful attacks. Agility builds should keep strength low to keep the cost of their many many attacks low.
I actually spent the GPP to get the strength move that lowers your tonus in it, just so I could prevent it from levelling and keep it low. Don't need to use it in a match, you can use it when you spar with Silver.
