newbie ring?

its so boring to one shot all enemies, any downside to not use the newbie ring? im kinda new

If you want to play "Old school" you need to not accept/use the Beginner Guide rewards. If you ignore it and focus on main and side quest you will have loads of content that will generally scale pretty well (you may have to grind). Hopefully in the future they will put an option to enable it or not as the ability to get those rewards at level one is causing the problem. To be fair the beginner rewards are quiet generous and it can help an old player catch "End Game" content much quicker.
