During the very early designs we have sent surveys to our colleagues internally to collect feedback, then as we progressed more persons were able to test the features, professionals & players up to the beta were more players supported the final efforts.
**Research is a whole and very long process that involves multiple if all teams internally + externals, and not only in the final Beta phase.**

I believe it does, yes. I don't know much about that sort of thing (I'm an old man living in Japan), but what I can say is that I don't expect they intended to use popular symbology. More important is to have symbology that's easily identifiable in the context of the UI. All the other sexualities seems to fit the two gender symbols side-by-side, so for this one to add a third to the line makes it easy to spot in comparison to the others.
