choose from the drop down menu

On the Launcher, if you click DLC you can disable some of them. Thats about as good as I know. I don't personally own the latest stuff and find the game just fine.

Did it actually work? I've tried multiple times on different versions and CK3 just crashes at startup.

Yeah, all drivers up to date. I uninstalled and reinstalled using 1.9.2 and deleted the CK3 dir in documents. Still same issue. I tried four different previous versions with the same result. I'm new to CK3 and want to follow some tut's that are running on 1.9.2. I tried the latest version but since there's changes I get lost. It seems that these Paradox tuts on YT aren't all the helpful since they're all on different versions and difficult for me to follow. Think I just might give up on this funness and go back to playing Pokemon. Yeah, I got jaded towards Paradox. :)
