Go to Steam in top bar - > Settings - > Storage. Here you can add drives and it should catch up.
EDIT: Sorry, you are talking about the savegame folder? I don't know if you're able to reroute that, but could try solution below. Needs porting it back in Onedrive though.
But you didn't have to move things from OneDrive to main drive. The OneDrive is only syncing your files down from the cloud anyway. And you can set rules on individual folders to "Always keep on this device". It will not then get moved to cloud only and will be on your main drive - synced.
The base launcher routes savegames from %USER_DOCUMENTS%/Paradox Interactive/GAME, notice how OneDrive isn't mentioned. This, I assume, means that Documents has been hijacked by some Onedrive library that remains even after unlinking one drive from my PC. How annoying.
