You need 2 duchy titles. Those should be 125 Gold each to create.
IF you are struggling to raid, or don't know anything about raiding, try playing some Norse ruler for a bit and just practice raiding (Irish raid a lil different).
Once you've got the hang of raiding, Play a Norse Ruler (or use the same one in beginning) and vangarian adventure into Ireland. Hybrid Norse culture with Irish and call it Northern Irish (Norse Irish). Vangarian to the lower west duchy of Ireland (4 county) and once you cap Dyflinn, set it to capitol and put a succession law on the main duchy so you will your heir will inherit 5 counties (9 castles total ;). Norse have Scandinavian succession.
There are so many tidbits of info to pile into this but it would take a lengthy essay. Just get busy practicing.
I'd personally go with what armyissue said though and just try to learn the systems. Once you get the hang of them, the game's actually really easy unless you very deliberately handicap yourself.
Try Haestinn by the way (he's the viking who starts just south of Brittany); starts with a lot of troops and access to the better Norse CBs including the varangian adventure armyissue mentioned. He's a fan favourite for a reasonn.
If you do go with him (or any Asatru character in Europe really), consider converting to Catholicism later on if you don't wanna get crusades declared against you. The crusades aren't unbeatable (godawful AI) but they're a bit overwhelming when you're new.
