Try This Landless Character in China

Check out Cao Yijin. He's a 25 year old with an estate in the Kingdom of Hexi. He has high martial and always generates with the ambitious trait. You can become an adventurer or stay with your estate, and eventually conquer Hexi and the border territories or into China. I managed to go from an adventurer and conquered Jiangdong and formed the Kingdom of Wu and took most of China when the Tang collapsed. I ended losing to another warlord in the end but it was a lot of fun.

Are there any other notable adventurers in All Under Heaven? Maybe something similar to Master Todor from 1178 start date?

Note the guy I recommended doesn't start as an adventurer but you can become one from day 1. One adventurer I see is Master Ding Hui with the Wayward Spears in 867. He always has good traits and high martial. Another in 867 is Mistress Yu Xuanji.
