How do I change the court language?

open the court language map mode ( ctrl + w ) and click on a different language > adopt at the bottom left

Finding how to change court language is convoluted at best, unless you have mods adding the button, you can also check in your Culture screen a plus button near language under Cultural Pillars tab. Otherwise the 1st post above is the best advice

You also need to fulfill some requirements such as:
- Must have court (Be king or emperor)
- 5 years passed since last language change (no idea if date of creation of the court counts)
- 750 Prestige
- Can only change to languages of your rule's culture or language of another court in diplomatic range
