What goals do you set for yourself?
I'm the Emperor of Britannia, and I feel like conquering the entire map is going to be tedious at this point. I'm new to this game; what other objectives do you set for fun?

You could do the usual incest breeding program to create super human heirs.
There aren't any. Starting as a nobody count or landless it does not matter where you start, it is INSANELY easy to become emperor of whatever empire you please and the moment you do then there is nothing left to do.

PPL will come telling you "oh you RP", well you can imagine whatever the hell you want in your head that does not mean that there is more game to this.

This games biggest issue is that it is so damn easy the moment you understand how the game works. To the point there isnt anything at all to do unless you gimp yourself by never taking kingdom or empire titles and turn up settings so the AI has all the advantages.
Religious and cultural rezoning.
swap the regions that certain cultures are found in.
do things like making Ireland entirely french, and france entirely Han.

if you really need guidance, refer to the achievements. there are many that chain together well, and make for some good runs.
If you've got 'Roads to Power', could move on and start again somewhere new by picking an heir who's not going to inherit and becoming landless. That's what I usually do when I've got the empire or hegemony I was aiming for. The most fun run I've done recently was doing that with every hegemony (the lag towards the end is the biggest obstacle).
Anything is a goal if you put your mind to it. For example I dedicated a week of my life to actually reaching the last year.
As with most games these years... have to provide your own restrictions to make the game more challenging. There are some things you can change in the Game Rules to shake things up.
I usually set goals based on what major decisions are available. For example, Norse rulers can set up the Kingdom of Mann and the Isles and the High Kingdom of the North Sea. Those are two goals I like to go for as Norse (though sometimes I skip on the North Sea Empire; that can be a major headache). Or if I start at 1178 in the Middle East, I'll try to set up one of the empires that you can build there through decisions.

If I've done that and don't have anything else, I'll work on dismantling the Byzantines and/or HRE and work towards making the Roman Empire or another Hegemony (if possible).
I generally do the opposite, I start with some idea, usually silly, and see where that goes.
Like making a muslim in England or a white Wakanda.

Otherwise I noticed I tend to gravitate toward Sardinia and Rome because of the quality of the provinces and their central role in most things europe.

Anyhow you'll have to set your own goals, the game is a pure sandbox.
Once you understand its systems you can basically do whatever you want, dominance is just the easiest path (which does suck, in a few ways).
I usually try to secure certain regions and kingdoms/empires and hold there. I then try to suborn or destroy any threats/nearby rivals. Usually I don't try to 'paint the map' to do so; assassination, crusades, or using proxies is more interesting to me.
Oftentimes I just try to fulfill some weird achievement so that guides me.

If not going for an achievement, I have a few 'normal' goals I aim for:
- Scandinavia: the goal is always to click the end the papacy button with an important sub-goal being raid and steal the pope hat.
- Nomads: become the khan and destroy Europe until I am bored.
- Europe early starts: overthrow the initial rulers and form the HRE myself.
- Special story zones like Spain and Persia: Complete an appropriate ending based on ruler traits and how I feel.

Don't really enjoy the administrative or landless gameplay so no real normal goals there yet.

Two tips there: 1) use the character finder to recruit high intrigue characters, get them to like you, and then use them as agents. Having a few intrigue perks will help, but they're not really necessary. And 2) you can pause the game before you execute the scheme, set your spymaster to support schemes, increasing success chance, then switch back without unpausing. Bonus 3) you can bribe/sway/whatever characters in the target court then try to get them as agents, which can take you over the line if you were close before.

To add to this, there are specific roles in a ruler's court that are powerful agents. Bodyguards, doctors, food tasters, etc. The game tells you who will be a powerful agent in schemes; get them as agents if you can. I can't remember if spymasters can be agents too but if they can, they're the most powerful agent by far (I know for a fact if a spymaster is scheming, you'll almost never discover it yourself).
