Characters don't go bald as they age - but why?
I'm just curious as to why they left balding out of the aging process. The character models in this game are quite good in the way they move and their facial expressions. It reminds me a lot of Red Dead 2. I wouldn't be surprised at all to learn some of the same software or technology was at play there.

But what is the reason they left off male pattern baldness? Here's my theory. It would cause too many issues with people who are vain about their character's appearance. Think about all the action movies you've ever watched. Aside from obesity, the biggest cardinal rule for male heroes is that he can not suffer from male pattern baldness. A cool shaved head like Vin Diesel is acceptable, but Dale from King of the Hill is not.

Mister OP, you are forgetting one of the biggest action stars in hollywood. Bruce Willis. Huge patch of skin on the top of his head.

Matter of fact, here is a list of bald actors:

Not everyone has ♥♥♥♥♥♥ genes. If you take 100 elderly gentlemen, the bald ones stand out the most, so your brains go "oh, so aging makes you bald", while the rest still sport full hair cover.

Besides, we're talking middle ages. Life expectancy was half today's.

Now a serious answer: It's because they handled hair as meshes, and the only solution that wouldn't be ridiculously demanding on CPUs would be to make them "suddenly bald" at one point, which would just be disjointed and weird.

If they'd used strand-based hair maybe they could have but... That too would be demanding.

Also baldness has negative effects from a UX point of view because it removes one of the identifiers for characters who generally look pretty samey.

I read once that it comes from Greece. Like 90%+ of adult men in the region suffer from some degree of baldness. More Greek ancestry means a higher chance of baldness. That's why so few Native Americans go bald.

So the ancestors of Europeans, middle easterners and Africans come from the region of modern day Greece? That's a new one.

Greek explorers and traders could have also brought their DNA back over during the age of sail.

I don't think there's evidence to suggest that Greeks contributed so much to the genome of 3 continents.
