I ended up moving my capital city to Navarre (it's your capital city kingdom, not your title), which is the smallest Kingdom and was able to convert that quicker.

Completely control at least two of the following duchies:

Also, you can prevent things from drifting into your primary kingdom by periodically switching your primary kingdom. eg, if your primary is the kingdom of Aragon then every couple decades switch your primary to the kingdom of Valencia and keep going back and forward like that, as long as you don't wait too long that will effectively prevent any de jure drift.
Cant win through Status Quo or Détente becoze its not allowed in fully conquered Iberia.
