How do I create a custom adventurer with a custom spouse?
I am trying to RP in AGOT mod and I want to be an adventurer, but I also want a spouse to start with But I don't really see where to add a custom spouse in the place I start in. It just seems like I start alone.

How do I do this? Thanks

I think this still works... build out a custom character (the spouse) first and accept changes. Then, with the same county selected go back to the custom character menu and make the player character and accept changes. The first character you made should show up as a courtier you can immediately marry.

Edit: But you said adventurer so that probably doesn't work since you can't recruit out of a court. So I would start as a count and immediately marry the custom spouse then shirk your duty and become and adventurer.

So, what you suggest is:
- make my spouse first before my own character.
- start the game,
- then go into custom character menu (I am not sure where that is at this point, but I'll check later)
- create my character as a coubt or duke.
- marry the spouse character immediately,
- then forfeit my title and rank and adventure.

Correct?
Is it possible to make my spouse not part of a dynasty? Is it possible to make her lowborn?

Not quite. You don't actually start the game, you just finish creating the custom character (as the count, of the opposite gender of the character you intend to play as) and then click confirm so that they appear as the selected count, then click custom character again to create another. In the way the stock character you replace ends up in your court, the same happens with a custom character if you overwrite it with another custom character. Then yeah once you're married go on an adventure (not sure how it works in the mod, but in vanilla the option to go adventuring is not available to all cultures/religions unless they complete certain types of legend).

*Aside, to open that menu after the game starts you go to the multiplayer menu, but it won't work cause the would-be spouse would be landed.

Since the spouse will be temporarily landed I don't think they can be assigned to house lowborn without console trickery.
