There's other great mods too, for example the LOTR mod is a work of art as well.
The game itself can take some time to learn but imo its worth it.
I actually have a question about AGOT myself - I am not familiar with the TV show so will playing this mod feel too alien and confusing? It looks really good and I have a good grasp of CK3 but I am not sure if I will be able to pick things up.
Personally, I love GoT, but for a strategy game? In the films/books - apart no realistic feudal structure (few low nobles) - this world contains nearly no economy, which is the base of a strategy game. If it's added, so it's for me somehow not more a GOT world for me. But maybe for CK3 it works. :) Have fun.
