Then with debug mode active, bring up the character sheet of the character whose family you want to edit. Hover over that character and you'll see an ID in the tooltip. Type that ID down somewhere, then copy it to your clipboard. Let's assume for this example the character's ID is 1234.
Now open up your safe and hit ctrl + f. In the search, you'll want to type the following, replacing 1234 with the character's ID:
Keep tapping "find next" or whatever your text editor's equivalent is until you see the entry that shows your character's name. Once you've found that, you're in the right place.
Now you'll need to find the character's dynasty ID in the chunk of data you've just found. Copy that and repeat the process above. This one may take several more clicks, because often there are multiple different types of items with the same ID. For instance, there might be a dynasty 1234, an army 1234, a character 1234... You'll need to keep tapping "find next" or whatever until you find a chunk of data with a COA ID, because that's the next thing you're after.
Once you find the COA ID, copy it and repeat the process one more time until you find a data chunk that has RGB colors, parent and pattern data, this sort of thing. That'll be the coat of arms you want to modify.
Note that there'll also be coat of arms data near the top in a "metadata" section. I'm not certain but I think this is what's displayed on the save interface when loading a game. So just for good measure, you might want to repeat any modifications you make to this section as well.
