Need to train my brain to accept starting at 1066.
Also 867 has Vikings.
Honestly I hope Paradox adds even earlier starting dates something like around the 500s or 700s or something right after the fall of the western roman empire to really allow you to go crazy
That's highly unlikely.
However, there's a mod called Fallen Eagle that can scratch that itch for you.

1066 if I'm in a mood and don't feel like dealing with hundreds of years of research to get to better partition options. Also good for RPing feudal society, since the kingdoms and HRE are more stable and you have more tech and tournament options (if you have the new DLC). Pagan in the east starts with epic artifacts at this date, too.
Paradox has mentioned this iirc. I had become the most popular start for CK 2.
As someone who likes to start small, I prefer this age. though with the new mod that lets you essentially play with any title. I can now play as a count anywhere.
1066 mongols
Started in 867 and it was around 1200 that I restored the Roman Empire on my current playthrough. Kinda depressing to think there's only 250-ish years left. but I don't think I'd have been able to do it at all with the later start date. Not starting as a count in Spoleto (Roman culture created-character) and working my way up to emperor. Even with the free CB and overpowered MaA that are often winning wars for me in one battle, I don't think I'll be able to collect all the territory to fully restore it.
One downside is that I've maxed out development in Rome and I've been beating the clock to start development in the next era. Meaning those sweet legionnaires just came available to me even though my research rate is insane. (don't know why paradox decided to put them in the last medieval period)
I never play 860
In CK2 I played an even more later date than 1066, but in this game we don't have choice...
Depends whether I want to start with a christian faith or any other. With Christians, I start exclusively 1066 simply because their starting layout is kind of boring 867. There are basically the Karlings, Byzantine Empire and Iberia. Either way, it feels like you are part of a distinct, very strong power block and unless you as a player do your outmost to destroy it from within, not much changes during the playthrough. 1066 it feels like the Catholics are way more diverse and volatile. The spot of the Orhtodox faith is also weaker, making it more challenging and interesting.
