Which Countries can i play?

Most of them on the map, their vassals included :) the only ones that are not available are Republics and Theocracies, like Venice and the Papal States for example, the former and Steppe Hordes will be added sooner or later.

Yes, if it was formed in 867 or 1066. Otherwise you will have to start as a count or Duke and create it yourself.

There are basically no countries, you can certainly start with the highest Title, for example the HRE Emperor, but you don't control everything, just that character with their Titles.

You can choose to start from either Count, Emperor or anything in between.

Any Feudal, Tribal or Clan ruled Kingdom, Duchy, County or Empire. Do remember that you're playing as a dynasty rather than a country, and that at each moment you're also playing as a single member of that dynasty - a landed noble.
