Am I just having bad luck?
I hear people saying they usually get to fill out 2 sometimes 3 skill trees before a ruler dies but on average I get just one if Im lucky most I ever got was 2 lol. Its like by the time I get some really cool stuff my guy dies.

Yea I get 2 and maybe a few points into the last tree and then I die at around 60-70.

Potentially, but there's also factors that could affect it. Education is a big one because it fills out parts of the trees, but you also get skills faster the higher your corresponding stat is. How old are your leaders getting to? I normally aim for around 75 with mine. I make sure to get them great inheritable traits such as amazonian/herculean and other traits such as athletic that really help them survive longer. Also make sure you have a good court physician and don't let them lead battles. It's just too risky to let them fight if you don't want them dying young.

First, what age are your rulers dying at?

Second, each ruler gets a bonus to a specific tree on how fast you get exp on that specific tree. It ranges from 10% to 30% (it might be greater than 30%). Are you going for those specific trees?

Third, HAVE FUN and dont worry about min max everything. While this is a strategy game - it is also a roleplaying game. Roleplay and have fun - dont worry about maxing out everything.

If you take the health-related learning tree, it seems like leaders live a lot longer. There's a dynastic perk that gives +5 years to longevity, also. With both of those, I've had rulers live into their nineties and fill out four skill trees.

How can you tell which tree has bonus exps for your ruler ?

Its whatever his skill is, I think its usually highlighted. Then on the left it where you have 3 options it will tell you you will get bonuses. I always stick to my rulers prefered tree

The rate at which you gain lifestyle xp is increased by:

a) your education being in that skill, and having a high level of said education,
b) having a genetic intelligence trait and having a high level of said trait,
c) being on your liege's council in the appropriate role for your lifestyle,
d) having certain special buildings like universities in your personal domain,
and finally there are a number of events that can offer you the opportunity to gain additional experience points for certain lifestyles.

It is beneficial to take over as said ruler when they have just come of age and to keep playing them to a very old age (life expectancy increasing traits and perks help). If you do a number of these things you can expect to fill out two to three perk trees over the course of your life. Four is probably not possible, though i would love to be proved wrong.

Of course the more mediocre rulers may not get much over two done if even that.

There are some traits like Genius, that give a massive boost to lifestyle experience (it's like 30 % or so). Picking the right education and getting lucky with educating child events will also give you a head start. I haven't quite figured out how Mentors work (when do you get them?) but if you get a Mentor that will also give a nice boost. Some lifestyles also seem to have more events that grant massive amounts of experience. With diplomacy lifestyle I usually get swamped with correspondence events that all have an option to grant me additional experience or prestige.
