AFAIK there's no way to look to see who you made those kinds of promises to, except when you fail to meet them (obviously when it is too late).
Usually it is some old fart asking me to do that stuff, although I once had a vassal ask me to host a feast within 10 years and I was only 3 years old, and that wasn't gonna work. (I'd be 13 and still unable to call for a feast as a child)
The details are blurry to me, but AFAI can remember I promised a direct vassal of mine a holding owned by either another direct vassal of mine or a vassal of his.
That doesn't make sense. I've never seen an event that fits that description. Did you promise to go to war with someone to press his claim? That's a thing. In any event, in these kinds of situations the worst that will happen is a relations penalty or, if they're unlanded and you fail to press their claim, they'll leave your court.
