For the mechanic itself, every barony has a supply limit. Any army above that limit will lose supply on the monthly tick. Any army below that limit will instead restore some supply. This is why moving a big doomstack is not a good long term strategy as you will burn through supplies very fast. You likely do not have a massive stack as an adventurer, but if you cannot find a nearby barony with enough supply, split up your forces across multiple baronies and wait for them to resupply (just mind they do not get sniped).
As a side note, supply limits is why you often see crusades fail because they park their massive combined stacks everywhere and just die to attrition.
