Unless you run it in hands free observe mode it is still going to pause when things happen. I've seen several threads recently complaining 5 speed not letting them attend events because they cannot get there in time - because they cannot notice the announcement and then move the mouse fast enough.
As others pointed out, processing time usually limits your speed far more than anything else a little ways into the game. Better processors or limiting your demands on it will speed that up. Stay smaller landwise, keep your number or character portraits smaller (dynasty, court, etc) and minimize graphics settings.
If you want strategy games you can finish in hours try boardgames. Risk!, Axis&Allies, Go. If those aren't fast enough, or mentally demanding enough, try chess with a timer. All of those you can get as single player computer games on Steam.
Have a faster CPU. Or use the save option to return to the game when you want/have time to.
Most of the time spent while playing the game is micro, so cutting down on the scope of your domain should do wonders at increasing the progression of your gameplay. Even when playing as a king, there are huge differences between the kingdom sizes. For example, managing Bohemia goes a lot faster than Italy. Another thing that you really want to avoid is having too many children and dynasty members.
If you want to paint the map though, there is no way around slow progression. There is simply too much happening that can potentially destroy your empire, so fast forwarding then is like backseat driving directly into a game over.
