Problematic lack of Diversity and Inclusion
I've noticed theres only white men in Europe. why is that? minority groups would like to be represented.

There are white women in Europe too!

Seriously though if you wan to be the European ruler that brings diversity to Europe the best part of a thousand years early why not do it in the game for yourself? I haven't seen any racial opinion modifiers in the game so race is kind of a non-thing in this game a-side from appearance and historical accuracy of what races of people actually lived where.

They also weren't nobles. The overwhelming majority of characters in this game are nobility of some sort, even lowborn are from minor houses.

Not in the 9th to 15th century. It slowly became more common from the 18th century onward - with the discovery of America, large scale resettlement and the slave trade. Common folk who were not settlers or slaves had little to no reason (and no funds) to just mingle with locals in a faraway nation, not to mention that racism and xenophobia were extremely common and the laws in Europe wouldn't have protected foreigners (except for a very tiny elite) from persecution and robbery.
