What determines ward's personality traits?
Because I swear it's so frustrating having all my good kids having to choose between the worst traits in the game.

Shy / Impatient / Gluttonous
and
Fickle / Content / Trusting

are the only ones I get. Doesn't help that Impatient and Gluttonous are sinful and Shy almost prevent you from doing personal schemes

impatient really isn't that bad. Content is one of the best traits in the game imo and has a low weight rating to boot.

I am not sure if this still applies in CKIII but a little bit down on this page is a cross reference to what traits can develop depending on the traits of the educator/ward.
It also shows the traits an educator needs to intervene and remove traits you dont want.
Just keep in mind the age and time needed to do these things also depends on the quality of the educator.

Impatient isn't bad if it's not sinful. Content is good too, but it's not very useful when you're not culture head and you'd rather have stats that matter

I think that these developments (and choices to change them) are determined by the Childhood traits. Can't find a clear statement on the wiki though.
In that case you would have no control over the selection of choices you get on these events.

1. Impatient, even if it is a sin for your faith. Shy and Gluttonous are unplayable for me.

2. Fickle and Content are not bad traits - Trusting can be okay if you already have a positive / diplomatically controlled realm and a trustworthy spymaster.

Generally the stats of your ruler are not as important as the vassal opinion, and the impact of your effective choices. While having 1 stress level isn't the end of the world, having everyday choices giving you anything between 10 and 100 stress can quickly be lethal.

Boosting the stats is mostly a question of breeding the Genius trait into your lineage, getting at least one of Pedagogy and/or Groomed to Rule, and eventually the Dynasty Legacy which gives everyone a better education result. Also avoid the Intrigue education except for daughters with no prospect to inherit, they make very good spymasters.

Lastly your stats can also be boosted massively through the lifestyle, so starting with a ruler with <10 in everything is also not critical for your overall success.
