Do you increase vassal taxes and levies?
And to which level? High or very high?
Is it worth the opinion hit?

I did on my first playthrough, but I haven't done since. The only reason I don't do it is because of future vassals. I noticed sometimes when ab old vassal died, and a new one took over with the contract, the extra opinion modifier would push them negative enough that they'd instantly create a faction against me. It's not the end of the world but it's just a hassle I decided I could do without.

No, I try not to - and I try not to let them have hooks either.
The opinion penalty just isn't worth it and to equalise it out isn't fair to the liege - at all.
-15 for moving 1 upward.
+5 for 1 downward?

If the devs changed it so each was +/- 10 I'd consider tinkering with vassals.
Giving them special rights or changing tax for troops, or troops for tax, etc.

but it's too unbalanced.

No, the only reason I don't do it, it is because my heir is going to suffer short reign + high tax. No thank you, it's not worth it. Maybe in late game it's easier.

I do. Why worry about your heirs? That's their problem. Most of the time my heirs are in their 50s and well liked by the time they take over.

Early game there isn't much point in tampering the contracts, but later it's good to reduce levies and increase taxes, so penalties are lower and you don't really need levies anymore at that point in game.

I dont think theres much point, because at the start, it will barely make a difference, and not long after that you wont need it

With a big empire, I like to give my vassal kingdoms palatine contracts with forced partition, and then either default taxes/levies or, if they are loyal and well loved, I'll exempt them.
