If you only want to see the display of "elite troops", detach your MAA and Knights from your Levies, and quality will go up. Of course, the number of actual fighters goes down.
You could be losing more fights for other reasons, such as...
1. MAA countering one another, are you on the wrong side?
2. MAA performing badly in terrain - are you using Elephants in the Mountains?
3. An excellent array of superior knights on the enemy side.
4. An excellent enemy commander.
5. County Attrition and lack of supply.
no you aren't. the quality indicator has 0 effect on the outcome of battles. it's just a quick & dirty visualization to show you at a glance how good your armies are.
if you want high army quality, the most important factor (by far) is your domain. you need a large domain (10+ castles) and you want the buildings that buff the stats of your men at arms regiments in most/all of those castles and upgrade as high as possible.
when you play all the way into the 15th century there's really no excuse for not having a domain with fully upgraded buildings that each give +attack and +toughness to your MaA.
a proper late game MaA stack can stackwipe any AI army within the first few ticks of the battle. you don't even have to raise levies at all at this stage of the game

But fair question, where do i see which terrain is where?
or the perfect counter, i mean i cant just destroy and regroup every MaA for every War, or is it wise to do so?

I have 100 hours in this game, but i still dont get the whole indicator for war etc. like terrain
a stack of 10000 light cavalry buffed by 10+ fully upgraded hunting grounds will stomp any AI army. likewise, a stack of 10000 heavy infantry and/or pikes buffed by a dozen fully built up baracks will slaugher any AI army (you can mix pikes and heavy infantry since they get buffed by the same building anyway).
the more soldiers of one type you have, the less relevant counter units become. 2000 horses against 2000 spearmen makes the horses quite useless, but 10000 horses against the same 2000 spears will pretty much ignore the counter and just stomp them into the ground despite being countered
