For RP you can try reviving hellenism and making custom roman characters for late medieval palatini. But for me I usually use nordic character, hybridize it with italians, and make a new roman empire with varangian guards but under warmongering hellenism.
then again, doesn't Haesteinn deserve to be the Emperor of Rome?
If I did it again, though, I would definitely follow nullpo's suggestion and go with a custom roman culture character, because that's the only chance you're going to get to have one. (and get Roman heavy infantry, though they're not available until the last tech era, I think [it's been a while since I looked])
