People will mention VIET, but it's sooooo CK 2, and most the events just useless one offs. Too many "picking up one piece of gold." events which mean nothing.
RICE is much more solid (its still suffers from being a CK2 mod.) and focuses on adding flavor to cultures, so they are at least more immersive.
Do you have them assembled into a collection? What version of CK3 are you running them with?
EPE is good also, but it is slow to update a lot and if you are running other mods there are compatibility mods that you also have to wait on to update. I do not use EPE anymore because of this, I want to jump into a new game on a new update and not wait to play.

Most of it is visual stuff, but Load order is important in the list. I do not have load order in the description just takes a lot to maintain. I might add a screenshot of the order.
Most of the main mods, in their own description tell you the order they want in the launcher.
So screenshots of the mod list and their orders would be great for a new player.
When some of the other mods I use get updated to 1.12.x I will add them to my collection.

When CK3 first came out, within the first year I was running a lot larger mod list. It got smaller over the years, either by modders going away and not updating or by CK3 getting better.
My mod list use to be around 40+ mods and now it is shrinking to around 16ish.
