If you want to play as a merchant and dynasty I recommend games The Guild 2 or 3, SAELIG.
So I'm looking forward to adding Japan to the more popular category, it's in 10th And the 20th downloadable mod Shogunate.
I found another mod Oriental Empires there is China and Japan is at 12th download and 9th most popular.
More chance of them adding China and Japan than trading.
The rip in the map that excludes China/Japan is an indication, to me, that PDX-CK3 has aspirations to one day include an Asian expansion. So yes, I believe there's a nonzero chance of that happening, one day.
If this is still true, the expanding the map is one option of Crusader king III.

If there will be a store, however, it will be connected to the Merchant Republic. It will not be the for Fedual lords.
Trade could come, however the direction the game is trending kinda makes it not as important to depict with a huge mechanic system.
There are just too many other important things.
Try Imperator: Rome with the Invictus mod, that may be up your ally.
given the amount of work required you'd think the devs would seek to make a separate game for asia
I can see pop becoming a thing. Sure it doesn't have to be the main focus, but it could still be an aspect to CK3. I personally love developing my nation and being the most economically/technologically advanced Kingdom/Empire in the game. I, personally, would love the ability to create trade routes that impact dynastic relations, etc. Something like Houses of Caladria.
It's not like there wasn't a merchant republic dlc in ck2. Commerce always played a big part in the world. Since ck2, the game is less about medieval lords, and more about play what you want during this time period.
