So the tutor should have High learning skill first then the skill you wish your child to learn and these can be boosted further by the tutor being quick,intelligent or a genius. Depending on the guide you read, actually having the genius trait supersedes everything else and should be the first and foremost trait in all tutors.
Also your spouse if they have high learning can boost education in your child.
There is also a fair degree of RNG involved in the process too as I've had the same genius tutor create 3 star children but usually they are 4 star educated.
In CK2 it used to be if you chose someone with high learning skill the kid would become a scholar unless you swapped the tutor out for your desired education trait just before they turned 16. Now they let you select the desired education trait at the age of 6 and you just need someone with a high learning skill to educate them regardless of their actual trait.
