If you start off as independent the first you have to ask to become the caliph's vassal, it's much easier than fighting a huge empire over and over as an independent ruler.
Simply use the "Create Head of Faith" function in your faith screen.
The Ashari already have a caliph in both 867 and 1066, and all other Sunni faiths with a head of faith should follow him as caliph.
Likewise the Ismailites have a caliph in 1066, and other Shia like the Zayidi should follow him as well.
If you have a holy site for your particular faith, you can declare yourself as caliph of your own islamic faith, as long as it isn't identical to the faith of the current caliph.
Example: The Ashari cannot have a second caliph, though the Muwalladi in Iberia can easily establish their own.
Creating a new islamic faith should always adopt the current caliph if he exists, and (iirc) there is an event allowing you to either strenghten your relation with the caliph, or make it cheaper to become your own caliph later on.
If you want to get rid of your caliph, you just have to conquer his last piece of land. Since it is a landed title, this immediately destroys the caliphate and you can create it anew.
Due to islamic inheritance being 100% male-only, it also isn't possible to somehow inherit it from outside of the current bloodline. The caliphate title is always inherited by the direct primary heir of the caliph.
