It also takes into account the different choice options like if you decide to cheat or not.
That being said rng has to be a part of it as well. My current run since I have hit most achievements i wanted, I'm doing an almost 100 stat man start, and he never loses any type of fight or prowess contest even at the ripe age of 110. Hes currently 120 not really sure when hes gonna die.
I believe Prowess (and possibly Martial) for contests of arms, Learning and possibly Intrigue for games, and Diplomacy for poetry contests.
Tournaments are useful to upgrade all kinds of stuff (at random) at the smith tent.
Tournament wins get you a very nice purple prize that can be for any slot such as a weapon, armor, helm, regalia, etc. You get a Prize PER event won. So, 5 events, 5 wins, 5 prizes.
If I am not busy, I usually opt for attending a hunt, and occasionally a tournament. DO NOT feel like you have to goto every single event. ITS designed to suck your life.

Priority 2- Upgrade your lands/armies/money
Priority 3- Tournaments/Hunts/Pilgrimages/MentorTutorKids/Faround
