What do I do with excess prestige/piety
So far my campaign is going well to conquer all of the UK, however the snag I'm running into is I don't have that much gold, though partly from a recent spree of creating dutchies and usurping Alba, but I have nearly 3k prestige and piety.

What are you meant to do with this? I know I can just spam claimant and champions to come but I don't want to fill my court with that many potentially angry people. I could also get a load of MAAs but my income for prestige is only 3.3 so I don't want to run the risk of spending so much I end up slowly losing it until I die and leave my heir in a horrible situation to deal with.

That is one of the mechanics, those who can never fulfill their potential. Like taking a kingdom. Remember, there are two forms of prestige and you keep the tier is had reached regardless of if you spend the prestige. Although you can get it demoted through other things (like starting a war without the liquid prestige to pay.)

So having 5k prestige also means you are well respected among those who aren't direct enemies. There are many things fame can grant you, one of them is access and people.

So you want to use this to your advantage, as now you can get a marriage into a renown family. Stuff like that.

Remember you are always playing the dynasty, A character is limited, so prepping heirs in an important aspect and buffing their prestige early helps (honoring them in a feats, giving them good courtiers.)

Can also give heirs artifacts you are not using, old armor weapons regalia and crowns. All the other junk you are carrying around. It is not a lot but it gets them started.
