But you can form other kingdoms/empires 100 years before their actual formation dates. Like Hungary for example. I can see an early 1200s / late 1100s ottoman formation.

True. But this could be a really cool grand campaign idea. Do some research on the ottoman empire and choose somewhere to begin. I'd start as a specific duke or maybe a king and slowly form my own culture and religion that most resembles that of the ottoman empire.
