It doesn't have to be a game of its own. I know that America and Europe are very far apart, but there could still be a way to travel to Mexico from Europe when you increase your development. Aztecs and Mayas could add there own temples, pyramids and other buildings to Mexico. You could even launch campaigns to visit and explore mexico's lands and cultures without going to war or launch campaign wars. Aztecs and Mayas are old cultures, so it would make sense to add them in Crusader Kings 3.
Starts a game with, for exemple, Charles the Bald, and try to interact with literally anyone beyond the Byzantine Empire: You can't, at least not early on! Heck, Iceland is considered "too far to interact with".
The world is big for sure, but there is already a limit to how much you can interact with others set in place, without the big ocean. So, y'know, you can make the same thing with America!
Plus, if it's a DLC, maybe also get an extra, late-game Innovation where you can make boats that can traverse the ocean! And play as a Native-American tribe, create an Empire out of it, and actually DISCOVER Europe before Europe comes to America! Because, let's be honest, real history is seriously thrown out the window the minute you press the "play" button! :p
That said, there's nothing stopping you from modding in a Mesoamerican culture and religion and playing a Mesoamerican in Europe. You could even mod Haestein to be of that culture, religion, and appearance and make your own Sunset Invasion.
I don't like the idea of invading Europe as a Mesoamerican. I want the Aztecs and Mayans to have their own land - MExico - but let's be honest, CK3 currently needs a lot of rework on the current map that we have right now. That's why I don't agree that we need to add all of China, although it would be good to have China.
Europe and Persia still need a lot of rework, India needs rework, and Africa needs more rework. So I don't really see the need of adding China until the main map expands and improves.
Adding some of Greenland does make sense because we know that the Vikings arrived their very early; however, adding Canada is very boring. The land would be very boring to conquer. It doesn't have cultures like Mexico with Aztecs and Mayans. Mexico is more interesting.
Mods are not my preference. I want the developers to do better work than the mods do. The developers should do way better and must put in hard and smart work into CK3, so that it can become better.
However, Mexico is the perfect size, not too big and not too small. You have to admit that Mexico has several interesting cultures, which means that it will be more easy to add in the game. On the other hand, China is huge and it has more cultures and complexities, so it won't be easy for the developers to add.
The current map still needs a lot of rework, though.

Oh, so i guess mezoamerican cultures didn't have any differences from "classic" western-european feudalism requiring special mechanics to show that? Clearly, with simplifications like that you have no idea what you're talking about.
