Witchcraft is extremely powerful. In addition to doing what it says on the tin with all the passive bonuses, you get to hold a grand rite every 5 years and gain a random skill point. Really makes for strong jack of all trades type characters if you live a long time.
But there's more. All of the witches in your coven will join in your assassination attempts if you're trying to assassinate somebody at your court. So if you use Convert Witchcraft instead of Sway over the years you'll have agents spread out all throughout your vassals' courts. You can also use the Witchraft effectively as a Sway at the same time. Witches have a +20 opinion boost for each other, so if you expose someone and grant them a pardon it'll net you like +25 opinion, depending on whether or not they have Shy or whatever.
You can also use Witchcraft offensively against Clan governments. Clans depend on vassal opinion much more than Feudals, so if you are able to convert a Muslim ruler and then expose them it destroys their relationships and inevitably leads to rebellion. I like to think of it as placing a type of curse on them, a sort of "deal with the devil" type trope which obviously backfires like it does in all the movies.
