I dont see why it should be possible to take his titles as a catholic ruler. he is literally the pope. the head of your faith. the game is centered around religion and head of faith trumps all. the pope should keep his claims.
That generally means using Conquest or (Non-Pluralist) Holy War CB to strip him of titles.
You can use Other Peoples Claims (you want to use a Claim that prevents the Pope becoming a Vassal, so if he's got a Duchy title, you're either going to have to find someone with a claim on both his duchy and any counties he holds (and you have the appropriate innovation to press) or Push a Claim for the Duchy Title first, then free the Pope , then Push a Claim for the counties he holds.
The Problem with De Jure CB is that they'll vassalize if possible (so you have to make sure you can't take the target as a vassal (eg be of the same rank) and the problem with Claim CB is that they only take the target title and will vassalize the current holder if they hold subordinate County titles (which they usually do).
