Is CK3 fun in co-op for new players?
Or does it have a very steep learning curve like Europa and other Paradox games?

There's no real "CoOp". Though you could decide to ally together if you wanted. As far as difficulty, it's easier than EU4. Though still fairly complex compared to something like Civilization.

CK3 is a little bit more intuitive than other paradox games. However, you will still need to watch a bunch of youtube to really get the hang of it. I would say after 10-20 hours, and a few botched first playthroughs youll get it.

Most of CK3 is reasonably intuitive, the Tutorial is okay, and the tooltips do a good job of explaining things. A few parts of CK3 are brain-shatteringly dense, since they involve obscure historical practices. Nothing helps you learn like losing a run due to ignorance of gavelkind succession.

It's the easier of the paradox games to play and not be instantly wiped out before you start learning things. But to get decent you will end up watching videos etc. Playing coop can be difficult, you would have to keep trying to marry into alliances with each other without inbreeding or play liege and vassal etc. There will be some limitations either way, you might have periods where alliances aren't possible etc. But even having a powerful neighbor you know won't screw you over is still nice.
