probably because that would mean making the big bad white nationalists that are hiding around every corner ready to snatch up your children happy because it would mean nerfing the muslims. paradox wont risk that. they are swedish after all
Maybe give the Crusades stages where at first a few peasant special troops arrive, and then by the end, depending on funding/success/whatever, you can have a ball of raving peasants roving the holy land as God intended. Slap on a debuff to provinces if peasant stacks get to high and bob's you're uncle.
There's probably a better, more historically accurate, way to do a crusade. But as they are now they're just too floaty with no real power behind the crusaders (unless you make yourself the deciding factor). Of course, some people will probably say "most Crusades failed so they should be under-powered" and those people don't know how to have fun,
