That's basically it although "gain land" can mean a whole lot of things in CK3. Basically you want to grab counties until you can satisfy the kingdom requirements, then become the lawful owner by making the title. Then you move on to the next kingdom until you have enough counties to satisfy the empire requirements and create the title. The map views in the lower right corner are massively helpful for this.
That said though land acquisition is an ends to a means. You're really just trying to keep your bloodline alive until the end unless you're playing a set scenario. This being the case you can in theory start and finish a run without gaining any new land at all.
