Hard to say without knowing you but I also play Stellaris (love it), didn't love Imperator and love this game if that's anything to go by. I doubt we're identical though.
sorry for being a little vague, i def tend to the militaristic empires in stellaris tho every now and then i do love playing a megacorp that controls everything with sheer diplomatic weight

The military side of this game's definitely not the selling point. I'm not sure it really actually compares that well to Stellaris in general. Stellaris is about the faction, not the characters (in my experience). This game's much, much more character driven. You could check out some youtube clips and see if it's the kinda thing which appeals to you?
How you feel about the Sims though?
Don't use imperator (the game that PDX would like everyone to forget about) as a benchmark for PDX historical grand strategy. CK3 is good, especially for people like me who couldn't get into the nightmare that is CK2: unfriendly UI, HORRID "tutorial", stupid key features locked behind DLC (they literally made playing as a muslim ruler a paid feature, not so in CK3)

i only mention imperator because im a bit of a romaboo and it was the first paradox game i was exposed to but hated it (from a gamer AND historical prespective)

i play stellaris based on the recommendation of a friend and would like to dip my toes into a more historical game that isnt so bad lol

yeah you kinda got unlucky there. PDX abandoned development on imperator very quickly because it was just "too hard" to make good apparently....

Map painting isn't the selling point of this game. It is character driven, you play the head of a dynasty, to an extend. This mean you got limited control over your family members, sometimes almost none.

The joy of the game isn't in conquering stuff but meeting your own goals. Maybe you want to do a norman playthrough, start in Scandinavia, conquer Northern France to become Norman, then invade England and unite the island. Because at a certain point sheer momentum will make you conquer any foe. A big empire run by a competent player won't crumble unless you have very very very bad luck.

The challenge lies in playing a role, sticking to a character or story instead of min-maxing. Game the systems and you'll see the facade crumble. The game isn't amazingly deep but deep enough to enjoy the tons of flavor it has.
The Crusader Kings series tends to be a bit more character oriented than the other games Paradox has that are like this. You certainly can map blob, but I find this to be the more boring aspect of the game. To me it's all about who you are playing as, and what do they do.

For example, I had a game where I united India under one massive empire, I then made a new religion for the new India and had a lot of fun managing the internal aspects of said Empire. Sometimes I would get a fanatic ruler who would burn any who didn't convert. Other times my character was a nice guy.

I think the game is best approached as an RPG, look at your traits and play by them, really get into the mindset of your character, as it lets you craft interesting stories. If you're just here for the map painting aspect, eh it's a bit weak in that regard.

Crusader Kings does character driven gameplay better than Imperator, but I would take some time to watch some gameplay to get an idea I suppose.

again, you'd be unlucky enough to choose absolutely poorly through no fault of your own. Vic2 is literally unplayable due to a launch bug that EVERY SINGLE PERSON WHO BUYS IT ON STEAM must troubleshoot when they first buy the game. Srsly though, don't let all of these reasons discourage you from HOI4, it's amazing
