It's very difficult to keep fervor high with a large faith. The whole mechanic of further is meant to convey that large faiths are prone to heresy, so there's not much getting around that. Owning Holy Sites is probably your best bet.

As for heathens keeping their land, that is because your faith has the Pluralist doctrine (aka they accept the validity of others' beliefs). You need to convert to / create a faith that has the Righteous or Fundamentalist doctrine if you want to seize infidel holdings.

yeah in vanilla winning holy wars decreases fervor which doesnt make sense to me so i use a mod that allows me to inverse that so winning increases fervor, losing decreases, feels much better

It decreases because you've expending all of the spiritual capital to incite them to war. And dying for literally nothing sucks the motivation out of them when the realization sinks in that they got played and it was just to enrich some ♥♥♥♥♥♥♥ nobles and not actually the will of God. At least until enough time and propaganda has passed to convince them of the Noble Purpose once more. (and even if you're not holy warring a bunch, having a lot of corrupt priests reveals the man behind the curtain when it comes to religion, and sucks a lot of the motivation to keeping funding the Popeman who is using your generous tithes to build a giant palace for his choir boy harem)

conversely, losing holy wars, energizes a faith and makes them feel threatened and results in a backlash that increases fervor.

The religious revanchism that occurs when a religion has gotten it's nose bloodied by another.

Which pretty much always results in a crack down on jews (as you do) and other religious minorities within the religious sphere, as easy scapegoats to deflect the loss as personal responsibly and instead the work of heretics and heathens from within that need to be purged so that such weakness won't hinder their great religion again, which results in waves of fervor growing from the loss.

-------------------------------------

as for the other topic.

Whenever a heresy breaks out, it's parent religion gains a massive influx of fervor due to a shoring up the bases as it were against the heretical outbreak, and shaking them out of their stagnation and complacency.

Which only happened because the fervor had gotten so low that people were starting doubt and wander in terms of beliefs as to whether their current religion is REALLY the truth of existence and eternity and become more receptive to new ideas.

especially when they start question why their "religion of peace" is declaring so many damn wars in God's name.
