Emirate of Cordoba
Before I got into CK3, I didn't know the caliphate actually got that far into modern day Spain in the time spans this game takes place. Historically speaking, how were the Asturians, who seem to be outnumbered, able to defend and retake Iberia against the Umayyad? Why did Islam fail to control Iberia with the numbers they had against them?

Islam in Spain suffered the fate of many kingdoms...it tried to be too liberal... see Christians their churchs and practices were respected so long as they paid a tax....christians resented this because only the church or a catholic king can tithe their subjects lol so the Muslims knowing they couldnt trust the resentful christians created a new middle class...the administrative Jew....and this pissed the christians off even more as now they had the Jews with power over them instructing them on the law on behalf of a Muslim ruler....hence...the Inquisition :(

The spanish inquisition is why the emirate of cordoba fell apart?

no but in the aftermath of the reconquista which was aided by the christian populace of spain they basically decided the solution to this tolerant muslim kingdom ruling over them peacefully for hundreds of years...was to torture and murder everyone who wasnt a christian generally by crucifying them and then burning them alive....what can you say....Deus Vult right?!? I mean aside from fighting Iberian Christian revolts/Kings/King sponsored revolts/HRE/HRE sponsored revolts after getting ♥♥♥♥♥♥♥♥♥♥ by Charles Martel they calmed right down and stopped trying to expand into "Frankia"

what caused the collapse was not being christian. the majority of the populace was... they were a minority government in the majority of spain....whilst how the world worked made it viable for them to enlist sizeable armies and project power on the European stage for a time....being underminded and constantly attacked by christians who at times they couldnt really govern whilst not being able to get out of the box that is spain diminished them to a point where they just couldnt hold on..and kept slipping from controlling the majority of spain to southern spain to grenada and cordoba to just grenada to poof they're gone...also for some silly reason they didnt push the Northern Christian Kingdoms into the sea...so the Northern Christian kingdoms over time pushed them into it

The Reconquista took almost 800 years. Asturias is protected for Mountains, like most of Spain, it is second by mountains after Switzerland in Europe. The Roman Empire took the Galia in 4 or 6 years ( I don't remember exactly) but needed 400 years to take the north of the Iberian peninsula that is a natural castle. The Inquisition had nothing to do with the Reconquista it started 1477 and the last City Granada was taken in 1492. It was mostly a way to unify the religion in Spain. Most of the legend about the Inquisition is false, in 300 years in the official documents that are conserved were killed 1350 persons in the Spanish empire. Petty thieves and so confessed crimes against the faith because the jails were better and the punishment was less hard.

I am not going to answer all of this, but it will be great if you check some of the information that you have about the Reconquista, religions, inquisition, Geography and time frame... an example the silly reason that the Muslim didn't Push the Asturian kingdom to the Atlantic Ocean Is a range of mountains close to the 3000 meters with narrow valleys and pass very easy to defend.

...dude your talking about a people who migraited from Syria conquering along the way into the Iberia (in the Umayyad dynasty)....if they had really wanted to push the issue they could have...between the defensibility of the region, getting squashed by the christians at tours, probable fear of wars against christians causing further internal strife with their christians yada yada yada...they just didnt....if they had finished off conquering hispania entirely instead of trying to push into aquitaine/frankia proper they would have had a defensible realm which then they could focus on....trust me I played CKII....Mia the Calipha Umayyad ruled over the entire muslim world in one of my runs lol

They tried, they lost,. A really small christian 1/3 of the Muslim army got them in a mountain pass and destroyed them. Covadonga battle.
