Have army leaders with the siege engineer trait but most importantly have a few Man at Arms siege weapon units.
Thats the biggest deal.

With a good mix of siege equipment and perks you can get level 4-5 castles down in 30-45 days.

bring more siege engines and use a commander with siege leader perk. if you play with a martial lifestyle ruler, there are also some perks that speed up sieges.

but mostly it's about bringing more siege engines and replacing siege engines with better versions when new types (like replace mangonels with trebuchets in high medieval).

in my experience it's worthwhile to have 2 MaA regiments with siege engines. one full regiment is the bare minimum (not even worth trying without), but i found 2 to be much better.

TO add to this, make sure you upgrade your siege weapon regiments as you unlock better tech.

The current system requires you to destroy your older regiments and make new ones and fill them out.

Im like spending almost a year or two with each siege. Can you expand on that?

Dont know whats there to expand. Create Man at Arms units with siege equipment.
Have those units in the army that is sieging the castle.
Castle goes down way sooner.
The end.

If you are early tribal culture and dont have access to siege units then you are out of luck, have to do it the old fashioned and time consuming way.

every holding you can siege has a fort level. the base number for siege progress is 100 plus 50 for every fort level, so a castle with a fort level of 3 requires 250 points of siege progress to bring down.

each siege unit gives you a bonus to daily siege speed (0.3 to 0.6 from worst to best) so an endgame army with 2 regiments of 17 bombards each has a siege progress of ~20 points per day and will siege down a basic castle with fort level 3 in ~12 days. even a high level fortress with fort level 25 or so will only last ~2 months against that level of siege power.

earlier you have to live with slower sieges, but 2 regiments of 12 trebuchets each also crank out ~12 siege progress per day in high medieval and 2 regiments of 8 mangonels (early medieval tech) can still level a basic castle within about 40 days, so that's still a huge improvment over trying to starve them out with levies.

EDIT: i think the numbers may be off a bit. wiki says that trebs and mangonels are 0.4 and 0.3 respectively, but the conclusion is still the same obviously - bring more siege engines to get the job done faster.

I can afford the regiments, thanks everyone!
I wish the tutorial covered this in greater detail but you just are awesome.

Just wait till you reach the bombards and 17 size men at arms. You'll be taking every fort down within days.

Besides the siege machinery which you sometimes can't have (like as Norse tribal in 867), there is a great alternative with the Sappers trait from the Strategist lifestyle.

+0.1 Siege Progress for every Archer, Heavy Infantry, Pikeman and Skirmisher

Siege weapons primarily
Beyond that some traits give you a siege progression or siege duration bonus
And lastly there are random siege events which increase siege progression

To add to what others have said: Simply sieging more holdings at once speeds up the process quite a bit. Since you get 1 siege progress by simply having enough siegers (Unless there are high level forts) that generally helps to speed up sieging especially early on.

Specifically, there are two things that effect siege speed:

Siege Progress, which is a number that fills up over time, until the Siege Progress surpasses the defender's limit. You can get more Siege Progress per tick by using siege engine Men-at-Arms regiments (mangonel, Trebuchet etc), by having more men in your army, and by unlocking the Sappers perk under the Martial lifestyle (which lets several of your MaA regiments act like crappy siege engines)

Siege Event Timer, which is a number of days between siege events. Siege Events are RNG dependent, but they can do stuff like give you big boosts to your siege progress and lower times between future events, so it's always a good idea to have a faster timer. There's several ways to lower the event timer, but the main one is using a commander with the Military Engineer trait (he needs to be present and leading the siege army in order for the trait to trigger).
