Will there be other start dates like Crusader Kings II had? I really want to play as Ottomans.

Start as any character of the turkic culture group (if you grab the Oghuz you may even get a vassal with the Ottoman dynasty)
Invade Anatolia and take over the Byzantine Empire.

You could ask someone to make make a startdate mod for you. Osman and family are in the character files already. Wouldn't surprise me if the rest of the setting to play from that point were as well.

The files are just text documents, you can read them. I'd suggest you go with 1-1-1281 instead of 1337. Building the empire from the ground up would seem more fun.
