Try making a liberty faction and get all vassals into it. Then rebel.
Below that are the claims you can press that you will inherit if you win the war (also look like shields).
The 'advice drop down menu' will state how may people you can declare war on; but these could be a lot of wars you can fight on behalf of your vassals and courtiers. They inherit if you win the war and you will gain popularity with them.
To make your own 'dejure claim' (Lawful claim) on any county, you use the Bishop guy in your advisers to press a claim for it, which will take 9-36 months and cost money at the end of it. Then you can declare war and inherit it yourself.
