How to best Break up Large Empires

I got several empires that are pretty big and I'd rather not waste slow wars against each of them, so is there a good way to get them to splinter into smaller factions that I then can absorb?

Beat them to a pulp in w/e war or battle that usually does the trick.

Factions fire off, neighbours are creeping in, it's fun for everyone.....

well... almost everyone :)

just Murder Once the leader dies the Kingdom normally falls apart for me

As a tribe you can do a once per lifetime kingdom invasion. You can also do a once per lifetime holy war.

Most effective way I've found to completely destroy a kingdom is to capture or kidnap the king and force-convert them.

Some of King Charles' Vassals might not like his heir very much, but NONE of them like it when he starts preaching about Odin.

If the king got a lot of heirs, its easy, just kill the king and let the aftermath sort the rest :p

Yeah, don't murder him yet if he and his wife are still able to have kids. The more kids they have, the weaker they'll be.

Can also try to seduce his wife to give him more kids that are actually your kids. That's a classic.

Steal heir, force convert/recruit... choose if u want to marry him to steal the throne... murder king.
