Should I pick a healthy Mix of Types for the Counter Mechanics or just get as many Cataphracts as possible?

It is very dependent on the situation but generally I would say a mix will give you much more flexibility. An army loaded up with Cataphracts wouldn't do very well in mountainous or wooded terrain.

As long as you can afford it, heavy infranty is best during ealry, mix with pike later

Heavy cavalry is powerful, but also prohibitively expensive in the early game. They all have positives and negatives. Regardless of what you choose, I'd suggest developing your holdings with buildings that complement your chosen man at arms lineup. Cavalry can usually make good use of hunting and pastoral buildings, whereas others are infantry or archer focused.

I've noticed that the AI always gets light infantry as its first retinue. Your first men-at-arms unit should always be archers to counter them. After that just check your neighbours' army composition to find out what you need to counter.

personally i find it best to focus on a single type especially if you plan on getting duchy buildings that boost a specific type.
stacking all the bonuses on a certain unit type will crush mix armies. only suffering if they get completely countered which will not happen if you go all one type

went all light cav and every time i win a battle i wipe the entire stack. doesnt matter if its double my size on routed troops they just shred them

dont minmax, u can win most wars just by archer spamming even late game so
