we need a way to see the person who request

We need a way to track the person who is requesting a item..veggies ect.

I have lost several orders because I could not find the person.
They seem to be hiding.

and the timer goes to fast for some of the quest .
Places are closed and your still going building to building trying to find the person.

There's a "Find NPC" option at the bottom of their individual pages

There is one. Go in your journal, find the person, and hit FIND NPC. It zooms you right to them on the map.
