The quality doesn't change for whatever you stick in the insect farm or fish pond. it just duplicates the fish/insect up to a total of ten. I have bronze quality salmon in my pond and have never gotten anything else quality-wise from it.

Quick question on the fish and insect breeding - do we need to put 2 in there? I have been keeping 1 in there and it still reproduces. If you put 2 in there is it quicker? I find it takes an incredibly long time for them to duplicate at this point.

AFAIK, it takes 3 days each time and just doubles what it is in there. So 1 becomes 2, or 2 becomes 4, or 5 becomes 10. So best to keep 5 and when they double, take 5 out and let it go again.

I have not tested what happens if you add another bug mid cycle, if it resets the timer or operates separately. Also have not checked to see what happens if you have more than 5 in and letting it go (though I suspect it just goes to 10 and caps out)

My experience with the pond and insect house are the same as others have said. You can just put one fish or bug in the house or pond and it will multiply. You don't need to start with 2.
And yes, bronze salmon will give you bronze salmon. I haven't noticed that the cycle resets if you take out and put in bugs. But I haven't counted the days. I just keep 5 in there all the time, then take out a couple every day. Which leads me to think that while the cycle is 3 days, it's a bit more or less sometimes, just like some crops will mature a bit early or whatever.
Ooh, wolf spider! I have been meaning to see what the best insect is and have been breeding Atlas Moths (osmium) and making a bit. But I haven't figured out the very best insect, apparently, or the best fish.
Although, if you are breeding fish to use in cooking, it doesn't matter what they are for most recipes. And the quality also makes no difference (as of the time I last made sushi at least!)
